Wash a head of cauliflower and chop it into small bite-sized pieces. Set aside.
In a mixing bowl, combine the Eggcitables egg, almond milk, and apple cider vinegar.
In another mixing bowl, combine the flour and seasonings.
Put the cauliflower a few pieces at a time into the wet mixture and toss to coat.
Once the cauliflower is coated in the wet mixture, toss it in the dry flour mixture until it's evenly coated. Set aside in a separate bowl or place directly in the air fryer basket.
Fry the cauliflower in the air fryer on medium heat for about 25 - 30 minutes, tossing frequently to ensure even cooking. Turn heat to high at the end of frying to make the cauliflower extra crispy.
Bring a pot of salted water to a boil.
Wash and peel the potatoes, then chop them into small chunks.
Boil the potatoes for 15 minutes, or until they are extremely tender. Drain the potatoes then return them to the stovetop in the pot.
Add in butter, almond milk, garlic powder, parsley flakes, salt, and pepper. Mash with a fork or potato masher until desired consistency is reached.
Warm the corn niblets in a small frying pan over medium heat. Season with salt and pepper if desired.
To a wide, shallow bowl add mashed potatoes, air fried cauliflower, and corn niblets.
Top bowl with gravy and more parsley flakes.

For the garlic mashed potatoes, if you’re not a huge garlic fan, just omit the garlic powder. Feel free to compensate with different spices, or enjoy plain!
