
Easy Sweet Potato Sushi
Restaurant-style sweet potato sushi at home has never been easier. Made with sweet potato puffs, cucumber, and nori, this vegan and easy sweet potato sushi will satisfy all your Japanese food cravings!

Ingredients
- ½ cup Sticky Rice (uncooked)
- ¾ cup Water
- 1 tbsp Maple Syrup
- 1 tsp Salt
- 2 tbsp Shredded Carrots
- 2 tbsp Chopped Cucumber
- 8 Alexia Foods Sweet Potato Puffs
- 1 Nori (or Soy Sheet)
- ¼ cup Soy Sauce (for dipping)
- 1 tbsp Teriyaki Sauce (for topping)
- 2 tsp Sesame Seeds (for topping)
Instructions
- Prepare sticky rice according to package instructions. I cooked mine in the rice cooker with 1/2 cup of rice 3/4 cup water.
- While the rice is cooking, prepare the filling. Put the sweet potato puffs in the air fryer for approximately 15 minutes, turning once.
- Slice the cucumber into long thin pieces.
- Once the rice is cooked, mix in maple syrup and salt. Remove from heat and let sit for about 10 minutes.
- Get your sushi bazooka out. Rinse it with water so the inside is a bit wet.
- Press rice into both sides of the bazooka using a plastic - or reusable - bag.
- Press fillings into the center. Close bazooka and put the end cap on. Press the sushi roll to the end of the bazooka. Let sit for 10 minutes.
- Lay down your bamboo rolling mat. Or use a cutting board. Lay nori sheet on rolling mat shiny side down. Carefully wet the top and bottom edge of the nori with your fingers.
- Press sushi roll out of the bazooka, onto the Nori. Roll the sushi roll into the nori using the bamboo mat. Make sure the end is wet so it will seal. Let sit for 10 minutes.
- Run a sharp knife under cold water, then cut sushi roll in half. Wet knife between each use. Cut each half into 4 pieces. Place sushi rolls on a plate, drizzle with teriyaki sauce and top with sesame seeds. Serve with soy sauce.
Notes
- This recipe makes one sushi roll, which is enough for one person, or 8 pieces.
- I like to mix maple syrup and salt into the cooked rice to give it a bit of flavor and make it stickier. This is optional, I’ve done it many times without, but I prefer this addition! Try experimenting with different flavors in the rice!
- I used Alexia Foods sweet potato puffs as the filling for the sushi because it’s so convenient and easy, plus they’re a perfect size! Feel free to use fresh sweet potato cut into strips or sweet potato french fries instead.
- I used soy sheets as the sushi wrapper the first few times I made this, but lately, I’ve been using nori and I find it a lot easier to work with and it stays together better!
- I like to drizzle teriyaki sauce on my sushi, feel free to use your favorite sauce. You could also try our Spicy Peanut Sauce as a topping!
