Vegan KFC Bowl

Move over KFC, vegan KFC bowls are actually better than the original! This KFC bowls recipe is made with crispy and flavorful air-fried cauliflower bites, garlicky mashed potatoes, corn, and topped with warm brown gravy. Best mashed potato bowl ever!

Before You Begin

Ingredients

Air Fried Cauliflower Bites

  • 1 Medium Head of Cauliflower
  • 2 Eggcitables Eggs (or any egg sub)
  • ¾ cup Almond Milk
  • 1 tsp Apple Cider Vinegar
  • ¾ cup Flour
  • 2 tsp Paprika
  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder
  • 1 tbsp Parsley Flakes
  • 1 tsp Oregano
  • ½ tsp Cinnamon
  • ½ tsp Allspice
  • ¼ tsp Nutmeg
  • 1 tsp Marjoram
  • 1 tsp Sugar
  • 2 tsp Salt
  • 2 tsp Pepper

Garlic Mashed Potatoes

  • 5 Small Red Potatoes
  • 1 tbsp Butter (I used Becel)
  • ½ cup Almond Milk
  • 2 tsp Garlic Powder
  • 1 tbsp Parsley Flakes
  • 2 tsp Salt
  • 2 tsp Pepper

Vegan KFC Bowl

  • 1 ½ cups Garlic Mashed Potatoes
  • 1 ½ cups Cauliflower Bites
  • ½ cup Corn Niblets
  • 1 cup Vegan Gravy (I used brown gravy)

Instructions

Air Fried Cauliflower Bites

  1. Wash a head of cauliflower and chop it into small bite-sized pieces. Set aside.
  2. In a mixing bowl, combine the Eggcitables egg, almond milk, and apple cider vinegar.
  3. In another mixing bowl, combine the flour and seasonings.
  4. Put the cauliflower a few pieces at a time into the wet mixture and toss to coat.
  5. Once the cauliflower is coated in the wet mixture, toss it in the dry flour mixture until it's evenly coated. Set aside in a separate bowl or place directly in the air fryer basket.
  6. Fry the cauliflower in the air fryer on medium heat for about 25 - 30 minutes, tossing frequently to ensure even cooking. Turn heat to high at the end of frying to make the cauliflower extra crispy.

Garlic Mashed Potatoes

  1. Bring a pot of salted water to a boil.
  2. Wash and peel the potatoes, then chop them into small chunks.
  3. Boil the potatoes for 15 minutes, or until they are extremely tender. Drain the potatoes then return them to the stovetop in the pot.
  4. Add in butter, almond milk, garlic powder, parsley flakes, salt, and pepper. Mash with a fork or potato masher until desired consistency is reached.
  5. Vegan KFC Bowl
  6. Warm the corn niblets in a small frying pan over medium heat. Season with salt and pepper if desired.
  7. To a wide, shallow bowl add mashed potatoes, air fried cauliflower, and corn niblets.
  8. Top bowl with gravy and more parsley flakes.
  9. Enjoy the best version of KFC ever!

Notes

  • This vegan KFC bowl recipe makes 2 large servings! Divide the ingredients for the KFC bowl evenly between 2 bowls.
  • This recipe features my favorite egg replacer ever, Eggcitables! It’s the most realistic and easy to prepare egg sub out there! You can use your favorite egg replacer here, I would recommend Flax if not Eggcitables.
  • For the garlic mashed potatoes, if you’re not a huge garlic fan, just omit the garlic powder. Feel free to compensate with different spices, or enjoy plain!
  • I used St. Hubert’s Brown Gravy in this KFC mashed potato bowl. It’s my favorite vegan gravy ever! It comes prepared in a can, you just have to heat it! Plus the flavor and texture is perfect with potatoes!

  1. Tried the recipe today, not to our liking so I made a dip and that helped, plus I sprayed with water as didn’t want oil on them and that worked.
