Vegan Tuna Sandwich

Easy and delicious vegan tuna salad sandwiches made with Noble Jerky’s newest product, canned vegan tuna. An easy weeknight vegan dinner!

Ingredients

  • 1 Can of Noble Jerky Vegan Tuna (or homemade vegan tuna)
  • ½ cup Vegan Mayo (plus 2 tbsp for bread)
  • ¼ cup Chopped Cucumber
  • ¼ cup Chopped Red Onion
  • 2 tbsp Parsley
  • 1 Leaf of Lettuce

Instructions

  1. Chop the cucumber and red onion into small cubes.
  2. In a bowl, mash the vegan tuna with a fork until it separates into small pieces. Mix in cucumber and red onion chunks.
  3. Add vegan mayo and parsley, mix until fully combined.
  4. Toast two slices of your favorite bread.
  5. Spread vegan mayo on each piece of toast, to your preference.
  6. Spread tuna salad mixture on one slice of bread, top with lettuce, then press together with the other slice of bread. Cut diagonally into two triangles.

Notes

  • Use store-bought vegan mayo, or make your own homemade cashew mayo if you’re feeling fancy.
